2000 years ago in the hills of the Galilee, a small village was under threat of an attack. To save their wheat, the villagers harvested it while it was still green and hid it in a sheltered barn.
Fate had it and during the attack the barn caught fire. When the locals came to see what was left from their precious wheat, they rubbed it in their hands and made a discovery that we enjoy till this day – Freekeh, from the Arabic word “to rub” - the green wheat was roasted by the fire and attained a delicious smoky flavor.
Since then the Galilean locals produce Freekeh the authentic way, tending the same fields and then burning the green wheat and rubbing it clean just as their ancestors did, to bring the amazing health benefits and delicious taste of this ancient grain to kitchens everywhere.
